Yes thats true. I went to culinary school and my met and seafoods chef told us that after a while you dont have to touch it anymore, you can just use your tongs to determine it by touching it with them. It’s weird, i still have yet to pick up this skill…but the finger skill is much easier.

You can also do the Gordon Ramsey trick.. use your finger to feel your face:
Forehead = well done
Chin = medium
Cheek = rare
